GFCF Diet
So, I've been debating trying this with Joey for about a year now, and what it comes down to, is I will do anything to help him, and should have tried this sooner. It's just SO intimidating. I've done a lot of research online, especially recently, and I am ready to give it a go. I need to take baby steps though, because otherwise I see this would become very overwhelming for myself and for my husband. It wont be gluten FREE casein FREE right away. Just drastically reduced, and mostly for Joey. As I learn to cook GFCF I will buy less products containing gluten or casein. For milk we are going to go with an almond milk as we had success with that in the past. I doubt my husband will want that in his coffee though so it will be regular milk for him. I should be able to make GFCF pancakes and muffins, which I can serve with fresh fruit. I am ordering some GFCF bread (though maybe I should eventually learn to make my own) so I can make sandwiches. Joey loves rice and pasta dishes, so we are going to try a brown rice that is GFCF and I will get some GFCF pasta. I will make vegetable or chicken/turkey and vegetable purees to make a sauce to mix with the pasta or rice to create side dishes I think Joey will enjoy. The one thing I don't think we will go GFCF on right away is yogurt, but we may try a soy yogurt to start. We will also drink more water and less juice, and try to cut back on our sugars by eating fresh fruits that are lower in sugars. Hopefully I can find some GFCF crackers, so far I've only found GF, but I know Joey would love some crackers that I can make with a vegetable dip.. I know I can make my own cream cheese out of almond milk, which I really think he would enjoy. So this is how I am starting off... and I'll take it from there.

You'd be on teh same diet as our family....we're fully gf & cf free in our house as well!!
The best pasta that is gf is the Tinkyada pasta...tastes just like normal pasta, but is gf. it doesn't go mushy like the other brands do...
btw, there are tons of gfcf crackers...as you know Tristan has been cf free for quite some time, but there are a number of gf and cf stuff out there. The soy yogurt is awesome...tastes just like regular yogurt. Caitlin noticed no difference in the switch. The gf/cf crackers taste just like the regular ones we have found! As well, they sell in the stores, gf/cf waffles that you can just heat up like the eggo waffles...they have a bunch of different flavors too (blueberry, plain, wildberry, etc.).
